My son was headed to a pool party for a friend and I volunteered to bring dessert. I always volunteer to bring dessert when there is any kind of get together or party – it is the perfect excuse for me to bake and not eat everything I made.
Then I assembled the fish! I just put the tail on and put an M&M or two behind the tail to help it stand up. I then put M&M’s in lines to make the fish scales and put a fin in the middle and at the top. I used a bit of white frosting with a mini M&M for the eye and two mini M&M’s for the lips.
Because I wanted to make sure the frosting was still moist (I hate that word) and the scales and fins would stick to it, I only frosted and created one cupcake at a time. You can make any color combination of fishy cupcakes you would like – I stayed with primary colors but I bet they would be really cute with pink and purple fins and M&M’s – you could also use Skittles for the scales.
